For most people, sustained calorie deficit is the lever that moves weight. "Sustained" matters more than "perfect" — a plan you can hold for months will beat a perfect week you can't repeat. Exact numbers help in two narrow but useful ways: they kill the guessing that creeps into eyeball estimates, and they make trade-offs visible. Swap one ingredient, see what changes.

Why exact calories don't matter (a lot)

USDA per-100 g values are honest averages. Real food varies: a chicken thigh from one farm differs from another, cooking water-loss isn't measured, and a rounded teaspoon is not a measured teaspoon. The numbers here are best-estimates, not gospel. They're tight enough to be useful, loose enough that you shouldn't fret over a ±5 % gap.
