Ingredients
- 1 large slice (55 g) sourdough
- ½ avocado (~80 g)
- 1 large egg
- squeeze of lemon
- pinch of paprika
- pinch of salt
Method
- Toast the bread until golden.
- Smash avocado with lemon juice, salt and pepper. Spread on toast.
- Poach the egg in barely simmering water for 3 minutes; lift onto toast.
- Top with a small pinch of paprika.
