Avocado Toast with Poached Egg

Smashed avocado on sourdough, topped with a runny poached egg and chili flakes.

Ingredients

  • 1 large slice (55 g) sourdough
  • ½ avocado (~80 g)
  • 1 large egg
  • squeeze of lemon
  • pinch of paprika
  • pinch of salt

Method

  1. Toast the bread until golden.
  2. Smash avocado with lemon juice, salt and pepper. Spread on toast.
  3. Poach the egg in barely simmering water for 3 minutes; lift onto toast.
  4. Top with a small pinch of paprika.
