Brown rice base with black beans, corn, salsa, avocado and a squeeze of lime.

Ingredients

  • 1 can (320 g) black beans
  • 300 g cooked brown rice
  • 120 g corn kernels
  • 120 g salsa
  • 1 small avocado, diced
  • juice of 1 lime
  • ¾ tsp cumin
  • ½ tsp chili powder
  • cilantro to garnish

Method

  1. Warm black beans with cumin, chili powder and a pinch of salt.
  2. Build two bowls: rice, beans, corn, salsa, avocado, cilantro.
  3. Squeeze lime over.
