Brown Rice, Salmon & Cucumber Bowl

Cooked salmon flaked over brown rice with cucumber ribbons, edamame and a soy-ginger drizzle.

Ingredients

  • 240 g cooked salmon, flaked
  • 300 g cooked brown rice
  • 200 g cucumber, ribboned
  • 120 g edamame
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp grated ginger

Method

  1. Divide rice between two bowls.
  2. Top with flaked salmon, cucumber ribbons and edamame.
  3. Whisk soy sauce, ginger and a few drops of sesame oil; spoon over.
