Chicken & Veggie Kebabs

Marinated chicken cubes skewered with peppers, onion and zucchini — grilled or pan-roasted.

Ingredients

  • 300 g cooked chicken (from ~360 g raw)
  • 150 g red pepper, chunks
  • 150 g yellow pepper, chunks
  • 120 g onion, chunks
  • 200 g zucchini, rounds
  • 1 tbsp olive oil
  • juice of ½ lemon
  • 2 cloves garlic
  • ¾ tsp oregano
  • 1 tsp paprika
  • 1.5 g salt

Method

  1. Marinate chicken in olive oil, lemon juice, garlic, oregano, paprika and salt 15 min.
  2. Thread chicken, peppers, onion and zucchini onto skewers.
  3. Grill or pan-roast at 220 °C for 10–12 min, turning halfway.
