Cottage Cheese Protein Pancakes

Light, fluffy pancakes with cottage cheese and oats blended into the batter.

Ingredients

  • 150 g low-fat cottage cheese
  • 40 g rolled oats
  • 1 large egg
  • 1 egg white
  • 50 ml almond milk
  • ½ tsp cinnamon
  • 50 g blueberries
  • 2 tsp (10 g) maple syrup

Method

  1. Blend cottage cheese, oats, eggs, milk and cinnamon until smooth.
  2. Heat a non-stick pan over medium. Spoon in 3 small pancakes.
  3. Cook 2 min per side until golden.
  4. Serve with berries and a drizzle of maple syrup.
