Ingredients
- 3 large eggs
- 2 tbsp Greek yogurt
- 1 tsp Dijon mustard
- 1 tbsp chopped parsley
- 2 slices whole-wheat bread
- 30 g romaine leaves
- pinch salt
- black pepper
Method
- Hard-boil eggs 8 min; cool, peel, chop.
- Mix with Greek yogurt, Dijon, parsley, salt and pepper.
- Pile onto bread with romaine.
