Light Egg Salad Sandwich

Egg salad made with Greek yogurt instead of mayo, on whole-wheat with crisp romaine.

Ingredients

  • 3 large eggs
  • 2 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tbsp chopped parsley
  • 2 slices whole-wheat bread
  • 30 g romaine leaves
  • pinch salt
  • black pepper

Method

  1. Hard-boil eggs 8 min; cool, peel, chop.
  2. Mix with Greek yogurt, Dijon, parsley, salt and pepper.
  3. Pile onto bread with romaine.
