Ingredients

150 g cooked chicken breast, sliced

170 g (~1 cup) cooked brown rice

½ red bell pepper (70 g), sliced

½ green bell pepper (70 g), sliced

50 g onion, sliced

2 cloves (6 g) garlic, minced

1 tsp (2 g) ground cumin

1 tsp (2 g) paprika

Juice of ½ lime (~15 g)

1 tbsp (5 g) fresh cilantro

1 tsp (5 g) olive oil
Method
- Heat the olive oil in a pan over medium-high.
- Add the onion and both peppers; cook 5–6 minutes until charred at the edges.
- Stir in the cumin, paprika and garlic, then add the chicken to warm through.
- Serve over brown rice with a squeeze of lime and a scatter of cilantro.
