Fajita Chicken Rice Bowl

Ingredients

  • 150 g cooked chicken breast, sliced
  • 170 g (~1 cup) cooked brown rice
  • ½ red bell pepper (70 g), sliced
  • ½ green bell pepper (70 g), sliced
  • 50 g onion, sliced
  • 2 cloves (6 g) garlic, minced
  • 1 tsp (2 g) ground cumin
  • 1 tsp (2 g) paprika
  • Juice of ½ lime (~15 g)
  • 1 tbsp (5 g) fresh cilantro
  • 1 tsp (5 g) olive oil

Method

  1. Heat the olive oil in a pan over medium-high.
  2. Add the onion and both peppers; cook 5–6 minutes until charred at the edges.
  3. Stir in the cumin, paprika and garlic, then add the chicken to warm through.
  4. Serve over brown rice with a squeeze of lime and a scatter of cilantro.
