Greek Chicken Salad

Grilled chicken, cucumber, tomato, red onion, olives and feta over romaine with red-wine vinaigrette.

Ingredients

  • 240 g cooked chicken breast, sliced
  • 200 g romaine, chopped
  • 150 g cucumber, sliced
  • 150 g cherry tomatoes, halved
  • 40 g red onion, sliced
  • 40 g black olives
  • 60 g feta, crumbled
  • 1 tbsp olive oil
  • 2 tsp balsamic
  • ¾ tsp oregano
  • 1 g salt

Method

  1. Season chicken with oregano, salt and pepper. Grill 5 min per side. Slice.
  2. Toss romaine, cucumber, tomato, onion and olives with vinegar and olive oil.
  3. Top with chicken and feta.
