Lentil Bolognese over Whole-Wheat Pasta

Brown lentils simmered with tomato, carrot, celery (… use onion + carrot only here), and herbs — over whole-wheat spaghetti.

Ingredients

  • 500 g cooked brown lentils
  • 500 g tomato sauce
  • 40 g tomato paste
  • 150 g carrot, finely diced
  • 150 g onion, finely diced
  • 4 cloves garlic
  • 600 g cooked whole-wheat pasta
  • 1½ tbsp olive oil
  • 1 tsp oregano
  • basil
  • 20 g parmesan (optional)
  • 3 g salt

Method

  1. Sauté onion, garlic, carrot in olive oil 6 min.
  2. Add tomato paste; cook 1 min. Add lentils, tomato sauce, oregano, basil and 200 ml water.
  3. Simmer 22 min until thick. Season.
  4. Toss with cooked whole-wheat pasta. Optional sprinkle of parmesan.
