Ingredients
- 500 g cooked brown lentils
- 500 g sweet potato, mashed
- 120 g carrot, diced
- 100 g green peas
- 1 onion, diced
- 2 cloves garlic
- 30 g tomato paste
- ½ tsp thyme
- 1 tbsp olive oil
- 3 g salt
Method
- Sauté onion, carrot, garlic 6 min in olive oil.
- Add lentils, peas, tomato paste, thyme and 200 ml water. Simmer 10 min.
- Spoon into ramekins. Top with mashed sweet potato.
- Bake at 200 °C for 15 minutes.
