Lentil Shepherd's Pie Cup

A single-serve cup of saucy lentils and veg topped with mashed sweet potato.

Ingredients

  • 500 g cooked brown lentils
  • 500 g sweet potato, mashed
  • 120 g carrot, diced
  • 100 g green peas
  • 1 onion, diced
  • 2 cloves garlic
  • 30 g tomato paste
  • ½ tsp thyme
  • 1 tbsp olive oil
  • 3 g salt

Method

  1. Sauté onion, carrot, garlic 6 min in olive oil.
  2. Add lentils, peas, tomato paste, thyme and 200 ml water. Simmer 10 min.
  3. Spoon into ramekins. Top with mashed sweet potato.
  4. Bake at 200 °C for 15 minutes.
