Ingredients
- 2 cod fillets (~280 g cooked)
- 300 g cherry tomatoes
- 50 g olives
- 1 tbsp capers
- 2 cloves garlic
- 1 tsp oregano
- 1½ tbsp olive oil
- ½ lemon, sliced
- parsley to garnish
Method
- Preheat oven to 220 °C.
- Toss tomatoes, olives, capers, garlic, oregano and olive oil in a baking dish.
- Nestle cod into the sauce; spoon some over.
- Bake 16–18 min until cod flakes.
