Mediterranean Baked Cod

Cod fillets with tomato, olives, capers and oregano — baked in a single tray.

Ingredients

  • 2 cod fillets (~280 g cooked)
  • 300 g cherry tomatoes
  • 50 g olives
  • 1 tbsp capers
  • 2 cloves garlic
  • 1 tsp oregano
  • 1½ tbsp olive oil
  • ½ lemon, sliced
  • parsley to garnish

Method

  1. Preheat oven to 220 °C.
  2. Toss tomatoes, olives, capers, garlic, oregano and olive oil in a baking dish.
  3. Nestle cod into the sauce; spoon some over.
  4. Bake 16–18 min until cod flakes.
