Ingredients
- 1 whole-wheat tortilla
- 2 large eggs
- 2 tbsp (40 g) hummus
- 40 g cucumber, julienned
- 50 g cherry tomatoes, sliced
- 20 g feta, crumbled
Method
- Scramble eggs in a non-stick pan, 2 minutes.
- Warm the tortilla. Spread with hummus.
- Layer eggs, cucumber, tomato and feta.
- Roll tight, slice in half.
