Mediterranean Breakfast Wrap

Whole-wheat tortilla with hummus, scrambled eggs, tomato, cucumber and feta.

Ingredients

  • 1 whole-wheat tortilla
  • 2 large eggs
  • 2 tbsp (40 g) hummus
  • 40 g cucumber, julienned
  • 50 g cherry tomatoes, sliced
  • 20 g feta, crumbled

Method

  1. Scramble eggs in a non-stick pan, 2 minutes.
  2. Warm the tortilla. Spread with hummus.
  3. Layer eggs, cucumber, tomato and feta.
  4. Roll tight, slice in half.
