Mediterranean Chicken Rice Bowl

Lemony chicken over brown rice with cucumber, cherry tomatoes and a little feta.

Ingredients

  • 150 g cooked chicken breast, sliced
  • 170 g (~1 cup) cooked brown rice
  • 80 g cucumber, diced
  • 80 g cherry tomatoes, halved
  • 30 g feta, crumbled
  • 25 g red onion, thinly sliced
  • Juice of ½ lemon (~25 g)
  • 1 tsp (5 g) olive oil

Method

  1. Warm the brown rice and spread in a bowl.
  2. Toss the chicken with half the lemon juice and the olive oil.
  3. Top the rice with chicken, cucumber, cherry tomatoes and red onion.
  4. Crumble over the feta and finish with the remaining lemon juice.
