Ingredients

150 g cooked chicken breast, sliced

170 g (~1 cup) cooked brown rice

80 g cucumber, diced

80 g cherry tomatoes, halved

30 g feta, crumbled

25 g red onion, thinly sliced

Juice of ½ lemon (~25 g)

1 tsp (5 g) olive oil
Method
- Warm the brown rice and spread in a bowl.
- Toss the chicken with half the lemon juice and the olive oil.
- Top the rice with chicken, cucumber, cherry tomatoes and red onion.
- Crumble over the feta and finish with the remaining lemon juice.
