Ingredients
- 2 large eggs
- 30 g spinach, chopped
- 40 g cherry tomatoes, halved
- 10 g cheddar, grated
- pinch of salt
Method
- Crack eggs into a large mug. Whisk with a fork.
- Add chopped spinach, tomato and a pinch of salt.
- Microwave on high 60 seconds. Stir.
- Microwave another 30–60 seconds until just set. Top with cheddar.
