2-Minute Microwave Egg & Veggie Cup

A mug of eggs, spinach and a sprinkle of cheese — ready in 2 minutes flat.

Ingredients

  • 2 large eggs
  • 30 g spinach, chopped
  • 40 g cherry tomatoes, halved
  • 10 g cheddar, grated
  • pinch of salt

Method

  1. Crack eggs into a large mug. Whisk with a fork.
  2. Add chopped spinach, tomato and a pinch of salt.
  3. Microwave on high 60 seconds. Stir.
  4. Microwave another 30–60 seconds until just set. Top with cheddar.
