Quinoa-Stuffed Avocado Boats

Halved avocados stuffed with lemony quinoa, black beans, corn and cilantro.

Ingredients

  • 250 g cooked quinoa
  • 160 g black beans
  • 80 g corn kernels
  • 2 large avocados, halved
  • 80 g cherry tomatoes, halved
  • handful cilantro
  • juice of 1 lime
  • ½ tsp cumin
  • 1 g salt

Method

  1. Combine quinoa, black beans, corn, tomato, cilantro, lime juice, cumin and salt.
  2. Halve avocados; scoop out a little flesh to make room.
  3. Pile quinoa mix into each half.
