Ingredients
- 250 g cooked quinoa
- 160 g black beans
- 80 g corn kernels
- 2 large avocados, halved
- 80 g cherry tomatoes, halved
- handful cilantro
- juice of 1 lime
- ½ tsp cumin
- 1 g salt
Method
- Combine quinoa, black beans, corn, tomato, cilantro, lime juice, cumin and salt.
- Halve avocados; scoop out a little flesh to make room.
- Pile quinoa mix into each half.
