Salmon, Avocado & Egg Breakfast Plate

Flaked baked salmon, half an avocado, soft-boiled egg, cherry tomatoes and lemon.

Ingredients

  • 100 g cooked salmon, flaked
  • ½ avocado, sliced
  • 1 large egg, soft-boiled
  • 80 g cherry tomatoes, halved
  • 1 tsp olive oil
  • squeeze of lemon
  • black pepper

Method

  1. Soft-boil the egg: 6 min in simmering water; cool, peel, halve.
  2. Arrange flaked salmon, avocado slices, egg halves and tomatoes on a plate.
  3. Drizzle with olive oil and lemon juice. Crack pepper over.
