Salmon, Avocado & Quinoa Bowl

Flaked salmon, quinoa, cucumber, edamame and avocado with a lemon-tahini drizzle.

Ingredients

  • 240 g cooked salmon, flaked
  • 300 g cooked quinoa
  • 1 small avocado, sliced
  • 150 g cucumber, diced
  • 120 g edamame
  • 1 tbsp tahini
  • juice of ½ lemon
  • 1 small clove garlic
  • handful parsley

Method

  1. Whisk tahini, lemon, garlic and 2 tbsp water until pourable.
  2. Divide quinoa between two bowls.
  3. Top with salmon, avocado, cucumber, edamame and herbs.
  4. Drizzle dressing over.
