Ingredients
- 240 g cooked salmon, flaked
- 300 g cooked quinoa
- 1 small avocado, sliced
- 150 g cucumber, diced
- 120 g edamame
- 1 tbsp tahini
- juice of ½ lemon
- 1 small clove garlic
- handful parsley
Method
- Whisk tahini, lemon, garlic and 2 tbsp water until pourable.
- Divide quinoa between two bowls.
- Top with salmon, avocado, cucumber, edamame and herbs.
- Drizzle dressing over.
