Salmon Teriyaki with Brown Rice

Glazed salmon over brown rice with steamed broccoli — a quick weeknight win.

Ingredients

  • 280 g cooked salmon (2 fillets)
  • 300 g cooked brown rice
  • 250 g broccoli florets, steamed
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 2 tsp vinegar
  • 1 tsp grated ginger
  • 1 clove garlic
  • 1 tsp sesame oil

Method

  1. Whisk soy sauce, maple syrup, vinegar, ginger and garlic.
  2. Sear salmon skin-down in sesame oil 4 min. Flip; pour in sauce; reduce 3 min.
  3. Steam broccoli 4 min.
  4. Plate salmon over rice with broccoli; spoon sauce over.
