Savory Chicken & Egg Rice Bowl

A Japanese-style breakfast rice bowl with chicken, a soft egg, spinach and a drizzle of soy.

Ingredients

  • 120 g cooked chicken breast, sliced
  • 150 g (~¾ cup) cooked brown rice
  • 1 large egg, fried
  • 40 g (~1½ cups) spinach
  • 2 tsp (12 g) low-sodium soy sauce
  • ¾ tsp (4 g) sesame oil

Method

  1. Warm the brown rice in a bowl.
  2. Heat the sesame oil in a pan; wilt the spinach for 1 minute and set on the rice.
  3. Add the chicken to the pan to warm, then nestle on the rice.
  4. Fry the egg to your liking and slide it on top.
  5. Drizzle with soy sauce and serve.
