Ingredients

90 g cooked turkey breast, diced

1 large egg

2 egg whites (66 g)

40 g (~1½ cups) baby spinach

60 g cherry tomatoes, halved

30 g onion, diced

1 tsp (5 g) olive oil
Method
- Heat the olive oil in a non-stick pan over medium.
- Add onion and cook 2 minutes, then add the turkey to warm through.
- Add spinach and cherry tomatoes; cook 1–2 minutes until the spinach wilts.
- Pour in the beaten egg and egg whites and stir gently for 2–3 minutes until just set.
- Season with salt and pepper and serve right away.
