Savory Turkey & Egg Scramble

A fast, protein-packed scramble of lean turkey, eggs, spinach and tomato to start the day full.

Ingredients

  • 90 g cooked turkey breast, diced
  • 1 large egg
  • 2 egg whites (66 g)
  • 40 g (~1½ cups) baby spinach
  • 60 g cherry tomatoes, halved
  • 30 g onion, diced
  • 1 tsp (5 g) olive oil

Method

  1. Heat the olive oil in a non-stick pan over medium.
  2. Add onion and cook 2 minutes, then add the turkey to warm through.
  3. Add spinach and cherry tomatoes; cook 1–2 minutes until the spinach wilts.
  4. Pour in the beaten egg and egg whites and stir gently for 2–3 minutes until just set.
  5. Season with salt and pepper and serve right away.
