Ingredients
- 240 g cooked peeled shrimp
- 200 g mango, diced
- 150 g cucumber, sliced
- 80 g arugula
- 30 g red onion, sliced thin
- handful cilantro
- juice of 1 lime
- 2 tsp olive oil
- ½ tsp chili powder
- 1 g salt
Method
- Whisk lime juice, olive oil, chili powder and salt for the dressing.
- In a wide bowl, combine arugula, mango, cucumber, red onion and cilantro.
- Top with shrimp; dress and toss gently.
