Shrimp & Mango Salad

Cooked shrimp with mango, cucumber, red onion and arugula in a lime-chili dressing.

Ingredients

  • 240 g cooked peeled shrimp
  • 200 g mango, diced
  • 150 g cucumber, sliced
  • 80 g arugula
  • 30 g red onion, sliced thin
  • handful cilantro
  • juice of 1 lime
  • 2 tsp olive oil
  • ½ tsp chili powder
  • 1 g salt

Method

  1. Whisk lime juice, olive oil, chili powder and salt for the dressing.
  2. In a wide bowl, combine arugula, mango, cucumber, red onion and cilantro.
  3. Top with shrimp; dress and toss gently.
