Ingredients
- 280 g peeled shrimp
- 500 g zucchini, spiralized (3 medium)
- 4 cloves garlic
- 1 tbsp butter
- 2 tsp olive oil
- juice of 1 lemon
- handful parsley
- 1 g salt
Method
- Spiralize zucchini (or use a peeler for ribbons).
- Heat butter and olive oil. Sauté garlic 30 seconds.
- Add shrimp; cook 3 minutes per side until pink.
- Add lemon juice, parsley and zucchini noodles. Toss 1 minute and serve.
