Slow-Cooker Pulled Pork with Slaw

Pork tenderloin slow-cooked with apple cider and spices, shredded and served with quick cabbage slaw.

Ingredients

  • 800 g cooked pulled pork (from ~1 kg raw)
  • 400 g cabbage, shredded
  • 200 g onion, wedges
  • 4 cloves garlic
  • 3 tbsp cider vinegar
  • 2 tsp paprika
  • 1½ tsp cumin
  • 1½ tsp chili powder
  • 1 tbsp olive oil
  • 1 tsp brown sugar
  • 4 g salt

Method

  1. Rub pork with paprika, cumin, salt and chili powder.
  2. Place in slow cooker with onion, garlic and 200 ml apple cider vinegar + 200 ml water.
  3. Cook on low 4 hours. Shred with two forks; toss with juices.
  4. Mix cabbage with olive oil, vinegar, salt and a pinch of sugar; serve alongside.
