Southwest Tofu Scramble

Crumbled tofu scrambled with peppers, onion, cumin and turmeric — eggy without eggs.

Ingredients

  • 300 g firm tofu, drained
  • 1 red bell pepper (120 g), diced
  • ½ onion (80 g), diced
  • 2 tsp (10 g) olive oil
  • 1 tsp turmeric
  • 1 tsp cumin
  • handful of cilantro, chopped
  • 1 g salt

Method

  1. Heat olive oil in a non-stick pan. Sauté onion and peppers 4 minutes.
  2. Crumble in tofu with your fingers. Add cumin, turmeric, salt and pepper.
  3. Cook 5 minutes, stirring, until tofu looks set and golden.
  4. Fold in cilantro at the end.
