Ingredients

400 g cooked ground turkey breast

400 g (~2 cups) cooked quinoa

4 large red bell peppers (~600 g, halved)

200 g plain tomato sauce

100 g (1 small) onion, diced

2 cloves garlic, minced

1 tsp dried oregano

80 g part-skim mozzarella, shredded

½ tbsp (7 g) olive oil (for sauté)

2 g salt
Method
- Preheat oven to 200 °C.
- Halve peppers lengthwise, scoop out seeds. Place cut side up in a baking dish.
- In a pan, brown turkey with onion and garlic, 6–8 minutes.
- Stir in cooked quinoa, tomato sauce, oregano, salt and pepper.
- Spoon mixture into peppers. Top with mozzarella.
- Cover with foil, bake 25 min. Uncover, bake 8 min more until cheese is golden.
