Turkey & Quinoa Stuffed Peppers

Bell peppers stuffed with turkey, quinoa, tomato and a sprinkle of mozzarella.

Ingredients

  • 400 g cooked ground turkey breast
  • 400 g (~2 cups) cooked quinoa
  • 4 large red bell peppers (~600 g, halved)
  • 200 g plain tomato sauce
  • 100 g (1 small) onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 80 g part-skim mozzarella, shredded
  • ½ tbsp (7 g) olive oil (for sauté)
  • 2 g salt

Method

  1. Preheat oven to 200 °C.
  2. Halve peppers lengthwise, scoop out seeds. Place cut side up in a baking dish.
  3. In a pan, brown turkey with onion and garlic, 6–8 minutes.
  4. Stir in cooked quinoa, tomato sauce, oregano, salt and pepper.
  5. Spoon mixture into peppers. Top with mozzarella.
  6. Cover with foil, bake 25 min. Uncover, bake 8 min more until cheese is golden.
