Ingredients
- 300 g sweet potato, diced (~2 small)
- 240 g black beans (1 can drained)
- 100 g red pepper, diced
- 80 g onion, diced
- 2 large eggs
- 2 tsp (10 g) olive oil
- 1 tsp cumin
- ½ tsp chili powder
- handful cilantro
- 1 g salt
Method
- Heat olive oil in a wide skillet. Add diced sweet potato; cook 8 min until tender.
- Add peppers and onion; cook 4 more minutes.
- Stir in black beans, cumin and chili powder. Cook 2 minutes.
- Top each portion with a fried egg and cilantro.
