Sweet Potato & Black Bean Hash

Crispy diced sweet potato, black beans, peppers and a fried egg on top.

Ingredients

  • 300 g sweet potato, diced (~2 small)
  • 240 g black beans (1 can drained)
  • 100 g red pepper, diced
  • 80 g onion, diced
  • 2 large eggs
  • 2 tsp (10 g) olive oil
  • 1 tsp cumin
  • ½ tsp chili powder
  • handful cilantro
  • 1 g salt

Method

  1. Heat olive oil in a wide skillet. Add diced sweet potato; cook 8 min until tender.
  2. Add peppers and onion; cook 4 more minutes.
  3. Stir in black beans, cumin and chili powder. Cook 2 minutes.
  4. Top each portion with a fried egg and cilantro.
