Thai-Style Peanut Chicken Bowl

Shredded chicken with crunchy cabbage, carrot and brown rice, dressed in a quick peanut-lime sauce.

Ingredients

  • 280 g cooked shredded chicken
  • 300 g cooked brown rice
  • 200 g cabbage, shredded
  • 120 g carrot, julienned
  • 2 tbsp peanut butter
  • 1¼ tbsp soy sauce
  • juice of 1 lime
  • 1 tsp grated ginger
  • cilantro to garnish

Method

  1. Whisk peanut butter, soy sauce, lime juice, ginger and 2 tbsp warm water to a pourable sauce.
  2. Toss cabbage, carrot, chicken and cilantro with half the sauce.
  3. Plate over brown rice; drizzle remaining sauce.
