Ingredients
- 280 g cooked shredded chicken
- 300 g cooked brown rice
- 200 g cabbage, shredded
- 120 g carrot, julienned
- 2 tbsp peanut butter
- 1¼ tbsp soy sauce
- juice of 1 lime
- 1 tsp grated ginger
- cilantro to garnish
Method
- Whisk peanut butter, soy sauce, lime juice, ginger and 2 tbsp warm water to a pourable sauce.
- Toss cabbage, carrot, chicken and cilantro with half the sauce.
- Plate over brown rice; drizzle remaining sauce.
