Tomato-Basil Bean Soup

Blended tomato soup with white beans and fresh basil. Velvety, no cream.

Ingredients

  • 700 g (2 cans) tomato sauce
  • 300 g cannellini, drained
  • 150 g onion, diced
  • 3 cloves garlic
  • 15 g fresh basil
  • 1 tbsp olive oil
  • 3 g salt
  • black pepper

Method

  1. Sauté onion and garlic in olive oil 5 min.
  2. Add tomato sauce, beans, basil stems and 600 ml water. Simmer 20 min.
  3. Blend until smooth. Season with salt, pepper and torn basil leaves.
