Ingredients

150 g cooked turkey breast, diced

180 g (~1 cup) cooked brown rice

80 g (~½ cup) black beans

50 g (~⅓ cup) corn kernels

60 g (~¼ cup) salsa

½ small avocado (50 g), sliced

1 tsp (2 g) ground cumin

1 tsp (2 g) paprika

Juice of ½ lime (~20 g)

1½ tbsp (6 g) fresh cilantro
Method
- Warm the turkey in a pan with the cumin, paprika and a splash of water for 2–3 minutes.
- Stir in the black beans and corn and heat through.
- Spoon the brown rice into a bowl and top with the spiced turkey and beans.
- Add the salsa, sliced avocado, a squeeze of lime and a scatter of cilantro.
