Turkey Burrito Rice Bowl

All the burrito flavor in a bowl — spiced turkey, brown rice, beans, corn, salsa and avocado.

Ingredients

  • 150 g cooked turkey breast, diced
  • 180 g (~1 cup) cooked brown rice
  • 80 g (~½ cup) black beans
  • 50 g (~⅓ cup) corn kernels
  • 60 g (~¼ cup) salsa
  • ½ small avocado (50 g), sliced
  • 1 tsp (2 g) ground cumin
  • 1 tsp (2 g) paprika
  • Juice of ½ lime (~20 g)
  • 1½ tbsp (6 g) fresh cilantro

Method

  1. Warm the turkey in a pan with the cumin, paprika and a splash of water for 2–3 minutes.
  2. Stir in the black beans and corn and heat through.
  3. Spoon the brown rice into a bowl and top with the spiced turkey and beans.
  4. Add the salsa, sliced avocado, a squeeze of lime and a scatter of cilantro.
