Turkey, Mushroom & Spinach Rice Bowl

Savory turkey with sautéed mushrooms and wilted spinach over brown rice, finished with parmesan.

Ingredients

  • 150 g cooked turkey breast, chopped
  • 170 g (~1 cup) cooked brown rice
  • 100 g white mushrooms, sliced
  • 50 g (~2 cups) spinach
  • 30 g onion, diced
  • 2 cloves (6 g) garlic, minced
  • 12 g (~2 tbsp) grated parmesan
  • 1 tsp (5 g) olive oil

Method

  1. Heat the olive oil in a pan over medium; cook onion and garlic 2 minutes.
  2. Add mushrooms and cook 4–5 minutes until browned.
  3. Add the turkey and spinach; toss until the spinach wilts and turkey is warm.
  4. Serve over brown rice and finish with grated parmesan.
