Ingredients

150 g cooked turkey breast, chopped

170 g (~1 cup) cooked brown rice

100 g white mushrooms, sliced

50 g (~2 cups) spinach

30 g onion, diced

2 cloves (6 g) garlic, minced

12 g (~2 tbsp) grated parmesan

1 tsp (5 g) olive oil
Method
- Heat the olive oil in a pan over medium; cook onion and garlic 2 minutes.
- Add mushrooms and cook 4–5 minutes until browned.
- Add the turkey and spinach; toss until the spinach wilts and turkey is warm.
- Serve over brown rice and finish with grated parmesan.
