Ingredients

150 g cooked turkey breast, chopped

170 g (~1 cup) cooked brown rice

1 small zucchini (100 g), diced

½ green bell pepper (60 g), diced

1 small tomato (80 g), chopped

40 g onion, diced

2 cloves (6 g) garlic, minced

1 tsp (2 g) ground cumin

1 tsp (2 g) paprika

1 tsp (5 g) olive oil
Method
- Heat the olive oil in a skillet over medium; cook onion and garlic 2 minutes.
- Add the turkey, cumin and paprika; break up and brown for 3–4 minutes.
- Stir in the zucchini, bell pepper and tomato; cook 4–5 minutes until softened.
- Fold in the cooked brown rice, warm through for 2 minutes, and season to taste.
