Turkey & Veggie Rice Skillet

One-pan ground-style turkey with zucchini, peppers and tomato folded through brown rice.

Ingredients

  • 150 g cooked turkey breast, chopped
  • 170 g (~1 cup) cooked brown rice
  • 1 small zucchini (100 g), diced
  • ½ green bell pepper (60 g), diced
  • 1 small tomato (80 g), chopped
  • 40 g onion, diced
  • 2 cloves (6 g) garlic, minced
  • 1 tsp (2 g) ground cumin
  • 1 tsp (2 g) paprika
  • 1 tsp (5 g) olive oil

Method

  1. Heat the olive oil in a skillet over medium; cook onion and garlic 2 minutes.
  2. Add the turkey, cumin and paprika; break up and brown for 3–4 minutes.
  3. Stir in the zucchini, bell pepper and tomato; cook 4–5 minutes until softened.
  4. Fold in the cooked brown rice, warm through for 2 minutes, and season to taste.
