Turkey & Veggie Stir-Fry

Lean ground turkey wok-fried with broccoli, peppers, snap peas and garlic-ginger soy sauce.

Ingredients

  • 280 g cooked lean turkey (from 350 g raw ground)
  • 200 g broccoli florets
  • 120 g red bell pepper, sliced
  • 100 g snap peas (or frozen peas)
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1½ tsp (7 g) sesame oil
  • 1½ tbsp (20 g) low-sodium soy sauce
  • 300 g (~1½ cups) cooked brown rice

Method

  1. Heat sesame oil in a wok over medium-high.
  2. Add garlic and ginger; cook 30 seconds.
  3. Add turkey, breaking up with a spoon, until no pink remains (~5 min).
  4. Add broccoli, peppers and peas. Stir-fry 3–4 min.
  5. Pour in soy sauce. Toss. Serve over brown rice.
