Ingredients

150 g cooked turkey breast, chopped

90 g (~½ cup) cannellini beans

160 g (~1 cup) cooked brown rice

50 g (~2 cups) spinach

1 small tomato (90 g), chopped

2 cloves (6 g) garlic, minced

1 tsp (5 g) olive oil

A few grinds of black pepper
Method
- Heat the olive oil in a pan; cook the garlic 1 minute until fragrant.
- Add the tomato and cook 2–3 minutes to soften.
- Stir in the white beans, turkey and spinach; warm through until the spinach wilts.
- Serve over the brown rice and season with black pepper.
