Tuscan Turkey & White Bean Rice Bowl

Hearty turkey with creamy cannellini beans, spinach and tomato over brown rice.

Ingredients

  • 150 g cooked turkey breast, chopped
  • 90 g (~½ cup) cannellini beans
  • 160 g (~1 cup) cooked brown rice
  • 50 g (~2 cups) spinach
  • 1 small tomato (90 g), chopped
  • 2 cloves (6 g) garlic, minced
  • 1 tsp (5 g) olive oil
  • A few grinds of black pepper

Method

  1. Heat the olive oil in a pan; cook the garlic 1 minute until fragrant.
  2. Add the tomato and cook 2–3 minutes to soften.
  3. Stir in the white beans, turkey and spinach; warm through until the spinach wilts.
  4. Serve over the brown rice and season with black pepper.
