4 large egg whites (~132 g)

1 large whole egg (50 g)

50 g (~1½ cups) fresh spinach

50 g (~⅔ cup) sliced mushrooms

40 g (~¼) red bell pepper, diced

1 tsp (5 g) olive oil

pinch of black pepper
Method
- Heat oil in a non-stick pan over medium.
- Add mushrooms; cook 2 min. Add spinach and peppers; cook 1 min more.
- Pour in egg whites and the whole egg, beaten with a pinch of salt and pepper.
- Stir gently for 2–3 minutes until just set.
