Veggie Egg White Scramble

Ingredients

  • 4 large egg whites (~132 g)
  • 1 large whole egg (50 g)
  • 50 g (~1½ cups) fresh spinach
  • 50 g (~⅔ cup) sliced mushrooms
  • 40 g (~¼) red bell pepper, diced
  • 1 tsp (5 g) olive oil
  • pinch of black pepper

Method

  1. Heat oil in a non-stick pan over medium.
  2. Add mushrooms; cook 2 min. Add spinach and peppers; cook 1 min more.
  3. Pour in egg whites and the whole egg, beaten with a pinch of salt and pepper.
  4. Stir gently for 2–3 minutes until just set.
