Three-layer sandwich of whole-wheat bread, hummus, cucumber, tomato, sprouts and avocado.

Ingredients

  • 2 slices whole-wheat bread
  • 60 g hummus
  • 80 g cucumber, sliced
  • 80 g tomato, sliced
  • ¼ avocado, sliced
  • 15 g arugula
  • pinch salt

Method

  1. Toast bread lightly.
  2. Spread hummus generously on two slices.
  3. Layer cucumber, tomato, arugula and avocado. Stack and slice diagonally.
